在構思我們的第一款茶蛋糕時，我就一直覺得，像咖啡一樣，茶都可以有不同風味，每一種茶都有它獨特的個性。因此，在製作蛋糕時，我喜歡探索少眾茶類，將它們融入甜點中，帶出一種新鮮的體驗。我選擇柚香金萱茶原因之一，因為它的奶香與甘甜能與提子地完美搭配，而這款市面上較少見的茶也讓這款蛋糕顯得與眾不同。

What is Jin Xuan Tea?

金萱茶是臺灣茶業培育出的特色茶種。它屬於適度發酵的金萱烏龍Jin Xuan tea is a special tea variety cultivated by Taiwan's tea industry. It belongs to the moderately fermented Jin Xuan Oolong, which is between green tea and heavy fermented oolong, retaining a fresh tea aroma with a hint of warm taste. This moderate fermentation process gives Jin Xuan tea a faint milky flavor after brewing, which is not artificially added, but the unique flavor naturally generated by the tea itself.微弱的奶香味，這並非人工添加，而是茶葉本身自然生成的獨特風味。

Why didn't I get the yuzu flavor when I ate this cake?

 Yuzu Jin Xuan Tea is a special product that combines Jin Xuan tea varieties with Hualien Hegang Wendan, and is roasted in layers at a ratio of 1:1. In addition to the milky fragrance of Jin Xuan tea, there is also the fragrance of pomelo flowers, so when you eat it, you will first smell the aroma of grapefruit flowers, and what is presented on the tip of the tongue is the elegant tea fragrance and slight milk rhyme of Jin Xuan tea.
